Georgian Fire

I saw this garlic at a local farmer's market in 2014. It was grown sustainably, and it was such a pretty garlic with such smooth bulbs, that I had to have some. So I purchased about 1 1/2-2 pounds and grew it out for 2015. After it has cured and it's been inventoried, I may have a small quantity available for sale. I have found that the raw flavor is intense and sweet with a creamy finish while still putting off some good heat. The heat builds into a good kick, and it's an excellent garlic to use raw in salsa. It's also one of the most preferred varieties for canning and pickling.
