While I sourced my original stock from a Kentucky grower, over the years it doesn't seem to have adjusted much to my part of the state. So, 2020 will be the last year I will be offering Georgian Fire.

I saw this garlic at a local farmer's market in 2014. It was grown sustainably, and it was such a pretty garlic with such smooth bulbs, that I had to have some. So I purchased a small quantity and have been growing it out for sale ever since!

It's a very firm garlic, and when the weather isn't too humid, you get nice white wrappers. With Kentucky's humidity, I tend to get soot on the wrappers (looks like ash). It's harmless and only cosmetic, but I wish my bulbs were prettier.

I have found that the raw flavor is intense and sweet with a creamy finish while still putting off some good heat. The heat builds into a good kick, and it's an excellent garlic to use raw in salsa. It's also one of the most preferred varieties for canning and pickling.

Bulbs are at least 1.75" across.
