Spanish Roja culinary bulbs are for when you only plan to eat your garlic and don't want to spend as much buying bigger bulbs for planting.
Plant your culinary bulbs in nitrogen rich soil, and they should size up well for you. I believe most hard necks prefer cooler areas than the heat and humidity we have in Kentucky. So you northern growers will do well with this variety!
Due to a weird growing season here in Kentucky, a lot of my hard neck garlic did not have enough time to size up. Spanish roja did better than others, but still gave me about 50/50 when it comes to seed size and culinary sized bulbs. I keep it around because the bulbs store well, and it makes GREAT garlic powder. I find the smaller the bulbs the better they store.
Even though this garlic doesn't always size up for me, I find the culinary bulbs store the longest -- much longer than the bigger bulbs, so that's why I keep it around. Plus, it also makes GREAT garlic powder!
